~~~~~~~~~ Today's Recipe ~~~~~~~~
Most of us enjoy a good taco salad - this yummy version uses
chicken! A hot salsa will add extra spice, if that suits you. Enjoy!
Southwestern Chicken Salad
Dressing:
1 cup (240 ml) sour cream
1/2 teaspoon (2.5 ml) chili powder
1/2 teaspoon (2.5 ml) cumin
1/2 teaspoon (2.5 ml) salt
Salad:
2-1/2 cups (600 ml) cooked, cubed (1 inch/2.5 cm) chicken
1/3 cup (80 ml) chopped onion
2 medium ripe tomatoes, cut into 1/2 inch (12 mm) pieces, divided
1/2 cup (120 ml) sliced ripe olives
4 cups (960 ml) shredded lettuce
1 cup (240 ml) salsa
1 cup (240 ml) shredded Cheddar cheese
Tortilla chips
In large bowl stir together all dressing ingredients. Stir in chicken,
onion, tomatoes (reserve 2 T/30 ml for garnish) and ripe olives.
Cover; refrigerate at least 1 hour. To serve, line large serving
platter with shredded lettuce. Top with chicken mixture. Spoon
salsa over chicken mixture; sprinkle with cheese and reserved
tomatoes. Garnish with tortilla chips.
Makes 6 servings.

Hi, First of all, let me commend you on an excellent newsletter.
This is one of my two favorites. I have a request for you and your
subscribers. My job is now requiring me to work 12 hour shifts (7am
to 7pm) on Saturdays and Sundays. My husband will be home with
our 2 year old while I am at work. Hubby's cooking skills leave
much to be desired. I am in search of some recipes that are easy
enough for him to cook for our son and himself. I would like to keep
the food as healthy as possible, but EASY (and I mean "mac n
cheese easy"). I have thought about buying some of the convience
foods that are on the market, but I don't care for the price, or all of
the "nasty stuff" that's in them. Any help is greatly, greatly
appreciated. Thanks a bunch!!

~~~~~~~~~ Critter Corner ~~~~~~~~~
Critters have nothing to do with recipes or cooking, except for
maybe their licking up what we drop on the floor while cooking.
But as much as I love and collect recipes, I also love (and
collect?) critters. I know that many of you feel the same about
your four-legged friends, and thought it might be fun to share
some of our favorite "critter stories" with each other.
Reva shares this one today:
After we had to have my cocker spaniel, Prince, put to sleep, my
husband wanted to get a puppy right away. He thought our other
dog, a German shepherd named Star, needed a playmate. He
wanted to get a puppy because he thought Star would be more
accepting of a puppy. I had been thinking for sometime that when
we got another dog that I would rather get one from the pound
instead of another purebred dog so this time he agreed. The first
one we picked out was a stray German shepherd mix but she
couldn't go home yet because they wanted to give her owners time to
claim her. We went up and saw her a couple of times while we were
waiting. The day we were going to bring her home, we went up to the
Humane Society to get her and she was gone! The owners had
claimed her the afternoon before. I was so upset. My daughter told
me that there must be another dog meant for us. So we went back
up that afternoon and my husband spotted two puppies that also
were called strays even though they were less than six weeks old.
Since the owners didn't turn them in we had no information on them.
I was apprehensive because of their size. Unfortunately we could
only take one of them, so I picked the one that was brindle colored,
brown with black mixed in and black markings. She has white on the
tips of her front toes. We have no idea what she is though. I guess
we will be surprised when she grows up. Star is very good with her.
They have a good time playing together. It's so much fun to watch
them. I think my daughter was probably right.

Kathleen has a solution for the dogs-in-the-garden problem:
In answer to the young lady who asked about keeping dogs out of
flower beds, there is a proprietary spray called 'Keep off' that is
manufactured for this purpose. It needs to be reapplied after rain.
All you do is spray the ground in front of the particular bed you need
protecting. It is harmless to plant life and other wildlife and works
much better than pepper spray. There are numerous alarm systems
that produce a noise which scares the dogs and cats away that work
off a battery system. Your local gardening centre or garden
catalogue should have information about products also. What I find
amusing and works for birds as well as animals is the little windmill
products one buys for babys buggies (amusement parks?) or a string
of black thread and bottle tops. The noise in the wind makes the
scary sound. Of course one needs wind to make them work!! not
suitable for all areas.
